“Shibumi” is a Japanese word used to describe the astringent taste of tea, embodying the philosophy of Zen. This restaurant, located in downtown LA and awarded a Michelin star, serves Japanese cuisine in the Kappo style and incorporates elements of traditional Kaiseki cuisine. Chef David Schlosser prepares dishes at a 400-year-old cypress counter, presenting the most simple and unadorned flavors to customers.

離我住的 Downtown LA Proper Hotel只要步行十分鐘的路程,但夜晚以安全為上,我還是搭乘 Uber直達店面,低調的門口,門簾上印有餐廳 Logo
The Shibumi restaurant is located in Downtown LA, just a 10-minute walk from my stay at Proper Hotel. The entrance is low-key, with the restaurant’s logo printed on the curtain hanging over the door.

Kappo,日語割烹之意,簡單來說就是開放式廚房,描述客人坐在廚房前,直接看到廚師料理。
Kappo is a Japanese culinary concept that roughly translates to “cut and cook.” It is essentially an open kitchen, where guests sit in front of the kitchen and watch the chef prepare the dishes.

I ordered the Emperor’s meal which upgrades the meat to Matsusaka wagyu. The meal includes items from both set A and set D, and the details of the meal can be found on the restaurant’s website.

Shibumi is a restaurant I would recommend to friends who enjoy Japanese cuisine and are visiting Downtown LA. It offers more than just beautifully crafted Kappo-style cuisine by the chef, the restaurant has a low-key atmosphere that is perfect for a relaxed and peaceful evening.
